Earth Day is right around the corner, and there’s no time like the present to consider ways we can all treat the planet a little better. In Westchester, one of the easiest ways for locals to do Mother Nature a solid is by dining at the region’s eco-friendly restaurants. From growing their own ingredients to prioritizing waste reduction, these eateries deserve applause for their environmental efforts.

Within the Stone Barns Center for Food and Agriculture is fine dining at Blue Hill at Stone Barns. The restaurant sources from the surrounding fields, pastures, and other local farms. The farm at Stone Barns is self-generating, self-renewing, and there is no waste in the natural system. In 2018, the organization implemented a Conservation Action Plan to guide its efforts.

Here’s the inside scoop: The Blue Pig says, “Your ice cream can only be as good as your milk,” and that means sourcing milk from Hudson Valley Fresh, a nonprofit dairy cooperative dedicated to sustainability and eco-friendly practices. The three other places from which ingredients are sourced are a local garden, the ice cream shop’s farm, or Michael, the local coffee roaster. All ingredients are hand-washed, hulled, and crafted into yummy and unique ice cream flavors that rotate daily.

Our 2020 “Best New Bread Baker,” Anne Mayhew focuses on good, simple bread. Muddy Water opened in 2015 with the goal of minimizing energy consumption and negative impact on the environment. It’s time we taco ‘bout the many fresh and local ingredients being served at Tomatillo. This “farm-to-taco” Rivertown spot is the perfect place to satisfy a craving for Mexican food, especially if you’re vegan, vegetarian, or gluten-free. Tomatillo offers fresh dishes perfect for an Earth Day dinner. (Our advice: Check out the La Flor burrito, which swaddles roasted cauliflower, guac, spinach, jalapeño, cilantro pesto, and rice and beans.)

At Truck, they find ways to reduce waste and introduce eco-friendly initiatives without sacrificing quality or taste. One example of this is the drink menu, featuring hand-selected craft beers and wines on tap or in aluminum cans. The eatery also has property off Route 22 where it has organically grown pear trees, herbs, rhubarb, blueberry bushes, and a fig tree. As for the eats, don’t miss the burrito stuffed with brisket then topped with Truck slaw and Beluga lentils and served with horseradish crema.
